phospholipase enzymea lipase which made from Aspergillus niger by submerged fermentation, separation and extraction technology . The effect of lipase in the flour product is that it can repair the weak part of the structure of gluten network; improve the stability and holding capacity of the dough. It can also be used in leatherworking, feed, papermaking, detergent, bioenergy and other industries.

Application:
Lipase is a kind of serine hydrolase which can catalyze hydrolysis of triglyceride to finally produce Glycerol and fatty acids.

The hydrolysis takes place on oil-water interface. Lipase can also catalyze ester synthesis and interesterification. 
Phospholipids are lipids containing phosphate group and can be divided into sphingolipids and glycerophospholipids according to their chemical structure. In plants phospholipids exist predominantly in the form of glycerophospholipids. The general formula of their structures is shown inFigure 
Depending on the type of hydrolysis they catalyze, phospholipases are categorized into phospholipase A1, phospholipase A2, phospholipase B, phospholipase C and phospholipase D as illustrated in the below figure. The present product belongs to phospholipase B.
